3 fresh zucchinis
1 pound (0.5 k) of large shrimp
2 cloves garlic finely chopped
2 tablespoons of olive oil
1 tablespoon of white wine vinegar
1 tablespoon of lemon juice
1 tablespoon chopped basil (or other herb)
Red pepper to taste
Salt to taste
Start by making the zoodles using a grater, mandolin, or spiralizer and set aside. Preheat the Large Classic Skillet and add olive oil, garlic cloves, and red pepper. Saute for a few minutes being very careful not to burn the garlic as this can totally change the flavor of the dish.
Pepper the shrimp and add them one by one to the skillet. Let them cook for two minutes, and then add the white wine vinegar and lemon juice and mix well.
The Zucchini noodles cook in a blink of an eye, so add them to the skillet at the end. Stir to mix the ingredients, then let the noodles cook just for one minute. To finish the dish, add fresh chopped basil. Serve and enjoy.
