The holiday season is finally here! This is our favorite time of the year, especially when we get to spend it with friends and family. Don’t you agree? After all, there’s no better way to show your loved ones how much you care than by preparing a heartfelt and comforting meal, especially one that is made with pork! If you are looking for a delicious dish to serve during Christmas or New Year’s dinner, this festive Roasted Pork with Apples and Pineapple is the one!
The glaze made with balsamic vinegar and ginger, as well as the apples and pineapple, give a delicious tangy sweet flavor to the pork. As if this was not enough, we covered it with slices of bacon which “bathes” the pork, adding more flavor and keeping it juicy in the inside. 3 lb pork loin **
3 green apples, cut into cubes (I think they are cubes. See the picture at the end of this document)
1 pineapple, peeled and cut into cubes
8 to 10 slices thick cut bacon, chopped
1 onion, cut into pieces
1½ tablespoon ginger, minced
1 ½ tablespoons Dijon mustard
3 tablespoons balsamic vinegar
¼ cup olive oil
⅓ cup brown sugar
1 ½ teaspoons honey
1 teaspoon salt
In a small bowl, mix all the ingredients for the glaze and set aside. Depending on the size of the pork loin, you might want to use the Princesa or the Gran Cacerola. We used the Gran Cacerola. Mix the apples, pineapple, onion and ginger and season with salt to taste. Place this mixture in the utensil in order to create a “bed” for the pork.
Season the pork with salt. Use a kitchen brush to spread ¾ of the glaze on the pork and save the rest for later. Place the pork on the “bed” of fruit and carefully cover it with the slices of bacon. Cover with aluminum foil and bake at 375°F (190°C). We used aluminum foil because we wanted the bacon to brown. If we covered the utensil, it would seal and the condensation would not let the bacon brown.
After 40 minutes, remove the aluminum foil and spread the rest of the glaze over the pork. Bake uncovered for another 30 minutes or until the internal temperature reaches 155°F (70°C). Remove from the oven and let the pork rest in the utensil for at least 20 minutes, so that it is juicy and more flavorful. With the help of the slicer knife from our Elite Series Cutlery Set, cut the pork into slices and serve with the fruits as a garnish. Delicious!
** A 3-pound pork loin makes 4 to 6 servings. If you want, you can use a larger one, but just make sure to cook it longer, until it reaches a temperature of 155°F (70°C).
