Ingredients

  • 1 ¾ cup flour

  • 1 cup unsweetened cocoa powder

  • 1 ⅔ cup sugar

  • 1 ½ teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1 cup vanilla yogurt

  • ⅔ cup brewed coffee

  • ⅓ cup vegetable oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • Ganache/chocolate icing:
  • 8 oz (225 g) dark chocolate

  • ½ cup of heavy cream

  • 1 teaspoon instant coffee

  • To decorate:
  • Raspberries

  • Mint leaves

Directions

  • In a large bowl, add oil, eggs, and sugar and mix them together until fully incorporated. Next, add the yogurt, vanilla extract, and brewed coffee and mix well.
  • In another bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Gradually fold the flour mixture into the oil-egg mixture, stirring well after each addition until the flour disappears. Be careful not to over beat.
  • Divide the batter between two 1.5 Litre utensils or use one 1.5 Litre and one 2 Litre utensil. Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.
  • When ready, remove the cakes from the utensils and let them cool before assembling and decorating with the ganache.
  • To make the ganache, add 2 cups of water to the 3 Litre utensil and place the Inset Pan over it to form a water bath. Start heating the water on medium. Add the heavy cream and mix until hot. Stir in the dark chocolate, instant coffee and continue stirring until the chocolate melts completely.
  • Be careful not to overheat it, since the fat of the cream and chocolate might separate from the rest of the ingredients ruin the ganache.
  • To decorate the cake, pour the ganache over it and garnish with the raspberries and mint leaves.
