Chicken Empanadas are a traditional favorite in Latin American kitchens. They are made with a thin dough and a filling that varies depending on the country or region. The most common fillings are beef, ham, cheese, and chicken. Chicken is what we will be using today. Make sure you prepare enough empanadas, because everyone will be asking for more!
1 cup of cooked shredded chicken
½ red pepper, julienned
½ onion, julienned
3 garlic cloves, finely chopped
1 tablespoon of olive oil
1 tablespoon of vegetable oil
10 empanada dough discs
Salt and pepper
Preheat the Large Classic Skillet (30cm) and add the olive oil. When hot, add the chopped garlic and julienned onion and sauté mixing well with the Spoonula. Then add the julienned red pepper and the chicken. Mix together all the ingredients and season with salt and pepper to taste. Set aside.
Place a tablespoon of filling in the center of a dough disc. Moisten your finger in water and pass it around the edge of the round, then fold in half, and press the edges together using a fork.
