The time to share and celebrate with loved ones is just around the corner, and if you are already looking for a delicious menu item for your holiday celebration, guess what? We have a very special recipe that you can prepare for Christmas or New Year’s dinner. Yes! We are talking about Oven roasted turkey breast.
It is very simple to prepare, and you only need a few basic ingredients like butter, fresh herbs and garlic. Plus the combination of temperature and perfect cooking time produces a DELICIOUS AND JUICY bird.
Chop the carrots, celery and onion into medium cubes. Next, finely chop one garlic clove and place everything in a bowl. Set aside.
In another bowl, mix together the butter, the remaining minced garlic, oregano, pepper, salt, onion powder, thyme, and rosemary. Mix very well until all the ingredients are fully integrated.
Separate the skin from the turkey breast by gently running your fingers between the skin and the meat. Be sure to do it gently to avoid tearing the skin. Then, place the herb butter on and under the skin by gently pressing and distributing evenly. Repeat this process until the entire breast is completely covered.
In the Zylstra Series Large Frypan 28 cm, add the vegetables so they cover the entire surface of the utensil. Place the turkey breast on top of the veggies and place it in a preheated oven at 350 °F (180 °C). Cook for 1½ hour, or until a thermometer inserted in the meat registers a temperature of 165 °F (75 °C). Remove the turkey from the oven and let it rest for about 20 minutes. Cut the breast in half, and then slice it into pieces for serving.
If you wish, you can prepare a gravy with the turkey drippings. Pour the pan drippings from the roasted turkey through a strainer into a bowl and let cool. Remove any fat that accumulates on top and reserve two tablespoons.
Preheat the same utensil used to cook the turkey and add two tablespoons of turkey fat, 2 tablespoons of flour, and cook for two minutes while stirring constantly. Add the pan drippings mixed with chicken broth to make 2 cups of liquid. Cook while stirring constantly to prevent lumps until the gravy thickens. Season with salt and pepper and serve on the turkey slices.
