Cilantro Lime Rice

Has it ever happened to you that your meal is delicious but you feel that something is still missing? Well, maybe you need to add a side dish like this delicious rice. There are many ways to prepare it and it works perfectly with steak, chicken or fish. A serving of rice is always well received, and this cilantro lime rice will not disappoint.

This recipe is so yummy that you can also enjoy it as a main dish, just add some protein, and you are set. It’s your choice! This cilantro lime rice is very simple to prepare and the aroma and taste of cilantro give a unique touch that enhances flavors. We used chicken broth instead of water for added flavor. You may also use brown rice and add more vegetables of your choice to make a more nutritious.

Since we just got our new Rena Signature, we decided to give it a try and test this recipe. We are glad to say it worked perfectly, and you will surely love this new addition to the Rena Ware line. The Rena Signature is perfect to use as a saute pan and its shape makes it easy to stir ingredients. Let’s start by preheating the utensil on medium heat. Add olive oil, chopped red onion and sauté for two minutes, and then stir with the Spoonula.

Cilantro Lime Rice

Add the rice and mix well. Add the chicken stock, lime juice and salt to taste. Stir, and then cover the Rena Signature and let the rice cook for 20 minutes or until it absorbs the liquid.

While the rice cooks, chop the cilantro. Add it to the rice after 20 minutes when the rice has absorbed the liquid, and mix. Done! Now you can serve this easy but appetizing rice and enjoy it with your meal. Share your thoughts on this recipe with us in the comments.

Ingredients

  • 1 ½ cup rice

  • 2 ½ chicken broth

  • 1 tablespoon olive oil

  • ½ cup chopped red onion

  • 3 tablespoons lemon juice

  • ½ cup chopped cilantro

  • Salt to taste
