Wow! This is one of my favorite family dishes!!! I make this dish several times a month! It’s easy, flavorful, healthy, full of ingredients that are helpful to the body, and it’s so delicious. It truly pleases any crowd or company. Step one is inviting people over to your home.
And my absolute favorite part is that it’s all made in ONE piece of cookware, the 6 Liter Roaster!
This soup is full of healthy ingredients like chia seeds, coconut milk, ground lean chicken, sweet potato, spinach, chicken broth, and garlic!
Now, what do those ingredients do for you?
Chia seeds are full of protein with 11 grams of fiber per ounce. They are part of the mint family and native to Central America. Did you know “chia” is the ancient Mayan word for “strength? They also have lots of calcium, potassium, and magnesium.
Coconut milk is a rich source of magnesium, and healthy fats, including MCT fats that can be healthy for you.
Ground chicken is a lean protein, with zero carbohydrates, and very little sodium.
Sweet potato is a rich source of fiber and good source of Vit B and C. It is high in an antioxidant known as beta-carotene, which converts to Vit A when absorbed. Did you know sweet potatoes come in several different colors- including orange, purple, white, and yellow?
Spinach is rich in vitamin K.
Chicken broth has so many benefits; its top nutrients are collagen, magnesium, phosphorus, iron, and potassium! It has been known to improve digestion, protect your joints, clear skin, and improve your sleep.Garlic is part of the onion family, and has lots of vitamin B6, vitamin C, and selenium. And it’s simply delicious!
These healthy ingredients are all combined into a delicious nourishing soup! This soup is perfect in the summer in the evening and on weekends, and in the wintertime, all day long. I hope you enjoy it as much as my family and I do.

4 tablespoons olive oil
1 pound ground chicken, or chicken cut into 1 inch chunks
1 medium onion, peeled and chopped
5 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons ground coriander
1 small can of tomato paste
3 tablespoons chili powder
2 teaspoon salt and pepper to taste
3-4 medium sweet potatoes, peeled and cut into cubes
1 can green chilis
5-6 cups chicken broth
1/2 cup full fat coconut milk
3 cups spinach, chopped
2 cans roasted tomatoes, chopped
3 tablespoons chia seeds, optional
1/4 cup apple cider vinegar
3-4 scallions, diced for garnish, optional
1 cup sour cream, for garnish, optional
How to Make:
Heat oil in the 6 Liter on medium-high heat. Add the chicken and cook until browned, about 7-8 minutes. Push the chicken to the sides of the utensil, leaving of the middle empty. Reduce the heat to medium and add 1 tablespoon oil and then add the onion and garlic in the center of the utensil.
Add the spices… add the chili powder, cumin and coriander and stir. Then add the can of tomato paste and salt.
Add the chopped sweet potatoes, can of roasted tomatoes, and 4 cups of the broth, scraping the bottom of the pan to get the yummy bits at the bottom. Bring to a simmer and cook, until the the sweet potato is tender, 35 to 40 minutes. The soup will thicken.
Always sample and season with additional salt and pepper, depending on your taste. Then stir in apple cider vinegar. Add coconut milk. Stir again. Finally, add the chopped spinach, stir, and you are ready to serve.
Ladle the soup into big bowls and top each bowl with chopped scallions and sour cream, if desired. I serve this with organic tortilla chips. This is a delicious and easy meal. Sweet potatoes can always be replaced with regular potatoes if you desire.
