December is almost here, and Christmas trees are popping up everywhere. Cities and towns sparkle with green and red. This cozy atmosphere surely makes us think of the recipes we will be making this holiday season. If you love beef, look no further that this warm and hearty beef stew!
Our Christmas Beef Stew will amaze you and your family or guests. There is nothing better than tender juicy meat and there is no need to use an oven. Incredible right? Serve this delicious stew with mashed potatoes cooked using Rena Ware’s stack cooking method. Let’s start!
4 pounds (1.5kg) boneless chuck roast
1 teaspoon olive oil
1 medium onion cut into wedges
4 carrots cut diagonally
3 celery stalks cut into quarters
1 cup red wine
4 sprigs of fresh thyme
3 sprigs of fresh rosemary
5 cloves of garlic
½ cup chicken broth
1 bay leaf
¼ cup tomato paste
Salt and pepper to taste
Ingredients for mashed potatoes:
6 potatoes diced into cubes
3 tablespoons butter
½ cup milk
Salt to taste
Season the meat with salt. Preheat the 6 L Roaster and add the olive oil. When ready, add the meat and brown on all sides. Cut up the onion, carrots, and celery and place them in a medium bowl. Add one clove of the garlic, finely chopped.
When the meat is completely seared remove it using the Three Way Tongs from the Kitchen Tool Set and set aside. In the same utensil, add the vegetables and stir using the Spoonula until completely mixed. Season to taste. Add the tomato paste, chicken broth, red wine, thyme and bay leaf. When all ingredients are completely incorporated, return the meat to the utensil and mix it with the spices.
Mashed potatoes are the perfect side dish for this stew. Place the 6 L Grater/Steamer Tray on the 6 L Roaster, place the potatoes on top, and cover with the 5 Litre Utensil to make a Dutch oven. Wait until a water seal forms and cook on medium low heat for 1 ½ to 2 hours or until the meat and potatoes are tender.
Uncover the 6 L Roaster, remove the potatoes, and place them in the 5 Litre Utensil you used as the cover for your Dutch Oven. Use a fork to remove the Grater/Steamer tray from the 6 L Roaster, remove the meat, set aside.
For the mashed potatoes, add milk, and butter and mash using the Masher from our Kitchen Tool Set. Season to taste, stir with Spoonula, and they are ready to serve.
Finally, slice the meat, place it in a deep serving dish. Use the Straining Ladle to bathe the meat with the sauce and vegetables. Serve the creamy mashed potato and this delicious stew is ready to enjoy.
